Gazpacho Salad with Bar-B-Qued Chicken

Today’s featured recipe is a fresh, crisp and tangy chopped salad, just perfect for a summer evening Bar-B-Que.  Judy prepared this last night to accompany a delicious BBQ’d Chicken breast.

Here’s a quick and easy recipe you won’t want to miss.

From our kitchen to yours.  Enjoy the adventure.

Gazpacho Salad with BBQ'd Chicken

1 medium English Cucumber, peeled, halved and chopped

2 stalks Celery, chopped

1 Bell Pepper, green, cored and chopped

1 small Red Onion, chopped

1 Tbsp Olive Oil

1 Tbsp Worcestershire sauce

1 Tbsp Red Wine Vinegar

2 tsp fresh Lemon juice

1 tsp Salt

½ tsp Black Pepper, freshly ground

1/8 tsp hot pepper sauce, or to taste

Mix all ingredients in a large serving bowl. Toss well and serve.

Yields 6 servings.  PointsPlus value per serving is 2.  Prep time is 15 minutes. There is no cooking time. Level of difficulty is Easy.

Note: If you plan on making this dish ahead of time, Don’t add the Worcestershire sauce, Vinegar, Lemon juice and Salt until ready to serve.
